chocolate and strawberry pancakes


It is very nearly pancake day, I have great memories of pancake day as a child. Me and my sisters would queue up in the kitchen while my dad flipped the pancakes, each of us waiting for the next pancake to be ready, so we could eat them while they were still hot. I am a big fan of the classic lemon and sugar, and golden syrup pancakes, but if I'm feeling a tad extravagant, so I thought I would share this recipe with you all:

Strawberry and chocolate pancakes

You will need:
100g (4oz) plain flour
1 egg
1/2 pint milk
pinch of salt
strawberries
melted chocolate

To make the batter:
1. Lightly beat the egg and add to the milk.
2. If you aren't lucky enough to have an electric blender or mixer, then place the flour in the bowl, and make a well in the flour.
3. Add the egg and milk very gradually to ensure that the batter is not lumpy.
4. leave in the fridge for around 30mins (but it can be kept up to 8hours in the fridge if you are making the batter in advance).

Then, cook the pancakes, layer the fresh strawberries, roll the pancake up and generously drizzle the chocolate. Yum! If you want to jazz it up a bit, you can use white chocolate, add a bit of double cream, a smidge of cinnamon, or add hot chocolate powder or cocoa to the pancake batter to have chocolate pancakes... then all that remains is to ENJOY!

We used to queue up in the kitchen as kids too! Then get annoyed if someone else got a better one!

I'm golden syrup all the way, though your recipe does look amazing.
